The borked screen capture in OBS sounds like a window manager issue. I don't know what Pop uses by default, but I've found Openbox to have glitchy results and tiling managers like i3 are infeasible because OBS' compositor can't see into other workspaces. Xfwm, the default window manager in Xfce, seems to work great however, and can work with most any distro.

I have a hackintosh myself and combined with the Logitech MX Keys, it works like a charm. Don't go with the Magic Keyboard from Apple, the MX Keys from Logitech works way better on a hackintosh. Plus it just feels so much nicer!
How did you get the computer name to show up in system information? I can only change it in share options but that doesn't change it there
Intro: This is the exact thing that happened to me too. Got a 3950x and everything runs well except audio cuts out a lot. I haven't mapped my USB's yet, though. That could fix it.
You can set the command and option keys in settings. It’s under the mission control settings for some crazy reason.
If Pop isn't cutting, try Manjaro. They are quite optimized distros for what you are looking for. 😉

Hackintosh – The Pinnacle of Afro Engineering
Hp 8300 with rx 460/560 gpu is a super easy hackintosh.
Since you've already got Linux going, a single computer workaround to the Windows bootloader overwrite issue would be to passthrough the target drive to a KVM guest and initiate the install there. Alternatively when Windows is going to go on a NVME drive and the rest of your drives are sata, the sata controller can be disabled in the bios.
Will you be using any Adobe apps on the OS X install? All these AMD Hackintosh tutorials look great, but it seems like most people are having major issues with Adobe apps working with AMD in OS X.

Anyone knows if Pop! is running wayland by default (on non-nVidia systems)?
OBS on wayland isn't mature yet, and requires https://github.com/fzwoch/obs-gnome-screencast or https://hg.sr.ht/~scoopta/wlrobs on Gnome/WLroots respectively.
The easier way would be to force Pop! into running Xorg and using old methods for capture.
Both of those plugins have a package in AUR, so using Manjaro would make capturing on Wayland a bit easier.
Thanks to Apple I stuck on High Sierra Ryzentosh 🙁 Because I have NVidia GTX1060 video card. I don't want to buy a second card (AMD) because Ryzentosh is used mostly for some work related tasks when I need mobile SDKs and simulators. Another option is to get Nvidia GT 710. They say it's natively supported by MacOS, so no kexts are needed.
But the main question: is it ok to run two Nvidia GPUs at the same time (I mean your video about two GPUs for streaming that cause performance issues and also GT710 anf GTX1060 may have different driver sets) and can I start my Ryzentosh so that it could use the second slot video card?

Hey! If you are having issues with command / option key placement, use Karabiner-Elements! I've used it on my real mac/ hackintosh with my das keyboard for years.
I realise this isn't helpful with that particular case, or indeed many modern cases, but anyone who really needs to triple boot and for whom VM's just don't do it, I can't recommend a hot swappable 5. 25" four drive bay enough. It eliminates all the hassles involved with both GRUB and Windows bootloaders scrapping it out for dominance and wrecking Clover at the same time. 90% of the time my four drive bay has MacOS as my daily driver, with the other three drives just partially ejected – one win 10, one Ubuntu Mate and one for distro hopping, currently playing with Manjaro for Linux gaming, but that might well be a keeper.
I did a lot of triple boot builds on internal drives and sooner or later something always gets screwed up with a Linux or Windows update, while the hot swap drives have been bombproof for a couple of years now.
But no 32 bit app support. Kinda hurts for audio professionals
After having built in many versions of this chassis, your bottom is your intake. That's why you had issues. Finding fans that dont interfere with most motherboards is tricky, but possible. You have to take the feet off to access the mounting holes on either end as well. It's designed more like a chimney, but having gone back and watching the first one, you caught all that. I was the derp lol. Excellent video as always dude.
There is multiple ways to “manually set what keys are” in macOS.
Even the regular keyboard preference pane has options to swap all modifiers however you want to, even including the ability to use caps lock for something useful like ctrl or escape.
For more possibilities you can create your own macOS keyboard layouts to allow for a HUGE variety of customization including Unicodes for whatever key combination you like (allows you to create a layout that easily outputs special characters for different languages or math formula). There is software out there for that (ukelele for example), however most of them limit functionality somewhat so it may be better to edit the files yourself, it’s just regular XML. You will probably find some nice layouts on github, if not feel free to hit me up and I can send you some you can have a look at for "inspiration".

You should give Unraid a try with SpaceInvader's tutorial on mac in a box, I have successfully gotten Mac VM working along with Windows 10 VM and a few linux distro working on my 3950x system running Unraid. Spaceinvader got thunderbolt working on his threadripper build with mac in a box docker. Ive been playing around with Davinci Resolve within the mac VM and recently got an OBS docker going that can virtual screen capture more than one VM at the same time.
If you need any help, there is me and the insanelymac hackintosh commiunity which can help, i am an hackintosh developer and i worked on a few projects, i even created my own unibeast alternative from scratch
Not sure why you haven't tried to run a Linux KVM Host with MacOS, Windows, and whatever else you need… Makes more sense for what you do and don't have to worry about Windows borking your boot.
